A little known fact about acidic foods is that they can significantly lower the glycemic index of a food or meal by one-third. Basically, they slow the emptying of food from the stomach. This slows down digestion and as a result slows the rate at which blood sugar rises.
Here is a list of foods that are acidic:
- Chutney
- Dill and sweet pickles
- Green olive
- Horseradish
- Lemon juice
- Lime juice
- Marinated vegetables, such as artichokes, mushrooms, carrots, and green beans
- Pickled beets
- Pickled eggs
- Pickled garlic
- Pickled herring
- Pickled legumes
- Pickled pepers, such as jalapenos
- Sauerbraten
- Sauerkraut
- Sourdough bread
- Tangy salsas
- Vinegar
- Vinegar and oil salad dressings
Although they are listed above, some foods such as pickled beets, chutney, sweet pickles and marinated vegetables have added sugar. Be aware of this and only include those in limited quantities.
